Chicken Lettuce Wraps

  • chop yo onion (1 large sweet onion)

*make sure you get protective eyewear for this one


  • chop yo garlic (3-4 small cloves)

  • heat olive oil in a saucepan over medium high heat — sauté onions & garlic; add in 1 chopped bell pepper, 1 chopped jalapeño (remove seeds for less spicy),chopped water chestnuts, shaved carrots, & ginger

  • add in 1-2lb ground chicken

*season w/ pepper(you can skip the salt bc the soy sauce is salty)


  • Stir in soy sauce, hoisin sauce, 1 Tbsp peanut butter (sriracha if you’re feeling spicy)

  • Chop up kale and add in right at the end

  • Serve on lettuce cups, top with chopped cashews & green onions
